this shit be legit

i made some kick -ass portabella mushrooms last week. i never used to be a fan of mushrooms until my aunt irene cooked some AMAZING portabellas for us one time. so, the other day i decided to try to cook some myself and the results were [v]'antastic. after chris took his first bite he was like, "our marriage is legit." i busted up laughing and he looked relieved i took the joke so well.

so, here's how you can legitimize your marriage, too.

first, cook a roast for dinner the day before you plan on making the portabellas. cook the roast in beef broth and cream of mushroom soup.

then, on the night you are to serve the portabellas preheat the oven to 350 F. take a plate and pour olive oil on it and then sprinkle some coarse kosher salt on the plate. rub the caps of the mushrooms (after you wipe them of with a damp cloth) in the olive oil/salt mixture.

next, take three cloves of garlic and make thin slices length wise and place them in the portabella. then, stuff the mushroom with left over roast and pour some of the leftover broth, too.

top it of with broccoli tips and a pad of butter on the stem. bake for however long you think you should. i think i let it bake 30 minutes maybe a little less, but maybe more baking time would be better. i don't know. i always cook in terms of approximation. that's just the way i roll.

bogs rock!

bogs rock!
let's get one thing straight; bogs are not ugg boots. they are real boots. that are utilitarian, waterproof and warm in temperatures above -65 F. they are also comfortable and have revolutionized my outlook on foot wear. what have i been thinking trekking around the wasteland wearing chucks and flats? i wasn't thinking. but now feel like i have seen the light.
